Nutritional values of soybeans

Soybeans are very rich in nutritive components. Besides the very high protein content, soybeans contains a lot of fibre and are rich in calcium, magnesium. The soy protein has a high biological value and contains all the essential amino acids.

Soybeans are rich in unsaturated fatty acids and low in saturated fatty acids, which need to be avoided.

soybean consist of two components-soybean oil and soybean-rich protein. soybean meal makes up approximately 80% of the soybean. High in protein 36.5g and has unsaturated fat. it has an appreciable value of protein as compare to egg.

Soy Beans Raw Dried

This is what I do:

1. Boil about 250g of Raw Dried Soybeans in a pressure cooker under sim-flame for about ~45 minutes. Let 'em cool off over night in the cooker.
2. Store baked beans in a freezer (air-tight container)
2. Take out baked beans using a strainer. Eat them (2-3 spoons) along with every food. i.e. about 35g (of raw beans worth day)
3. 250g of baked beans last me a week. 1 kg Soybean consumed in a month per person.

Of course, I eat other pulses & veggies for better nutrition. Soybeans have become best complementary food/nutrient source for me. Cheers

Amino Acid breakdown of Soybeans

I have heard that Soybeans are the only bean that contain all of the essential amino acids required to metabolize a complete proteinfor a huma n. Do you know which amino acid(s) is present in Soybeans that are absent in other beans?

Do you know where I can find more info on the percentage of amino acid breakdown for soybeans? If in fact soybeans are "complete" then they could in theory supply all of the protein requirements and no other protein source would be necessary.

I think for most beans that the missing amino acid is supplied by adding rice to them.

Indeed, soy protein contains sufficient amounts of all essential amino acids for human nutrition. In addition, soy protein quality is considered to be equivalent to animal protein. The Protein Digestibility Corrected Amino Acid Score (PDCAAS) is superior to other methods for evaluating the protein quality of food proteins for humans because it measures the quality of a protein based on the amino acid requirements of a 2- to 5-year old child (the most demanding age group), adjusted for digestibility.

This is an overview of some PDCAAS values:
egg white: 1.0
soy protein: 0.92-1.0
beef: 0.92
beans: 0.66 -0.69
rice: 0.47
wheat: 0.40

Cereals have a rather low PDCAAS value. However cereals may be combined with vegetables, legumes, nuts, beans, or seeds, providing a complete 1.0 PDCAAS when eaten during a 24-hour window.
