Tofu omelette
Ingredients
250 g tofu
4 Tbs vegetable oil
1 Tbs chopped parsley
1 Tbs chopped spring onions
250 g mushrooms
3 eggs

Recipe directions
Beat the eggs. Mash the tofu and mix with the eggs and herbs. Add a little bit of salt and pepper.Slice the mushrooms and bake them 5 min. in the oil.
Bake 4 omelettes and fill them with mushrooms. Serve hot.
